I have just finished Chapter 2 of this brilliant book – and I mean brilliant! This is not a cookbook although there are some recipes in it. It is a book about the chemistry, biology and physics (and probably more) of cooking and eating; it explains why we taste things the way we taste them, why everyone seems to like and dislike different things and what taste actually is. Although it goes into some scientific details it is never dull or boring, and if you are like me, you will have many ‘aha’ or ‘light bulb’ moments, you will get inspiration for more culinary experiments and explanations why some seemingly incompatible foods taste so great together.
